I love breakfast food! Add some great veggies and it is perfect for a full dinner meal. When my kids were young I tried to get them to eat more veggies and this is one of the ways I could easily sneak some in.
Back then I diced everything up tiny so my kids wouldn't notice, now they pretty much just eat it the way I serve it. Plus, there's nothing like boosting your veggie content with some of your favorite breakfast foods.
First sauté those onions up or no one in my family will eat them. We don't really like crunchy onions.
When they start looking brown like this, it's time to put the peppers in. It took about 5 mins on med/low heat.
Oh it's starting to look so good. ♥ These grilled veggies made my house smell amazing.
Hand patted sausage patties are the best! This is a mix of elk and pork.
Make sure to add some seasonings. I love to add oregano and garlic to my eggs. ♥
When I'm in a hurry, these are THE BEST hash browns that are done in about 20 mins.
I get them at Costco and you open them and pour in some boiling water, close it back up and let it sit for 12 mins. Then you fry them up to get some crispy pieces. So Good
Once they turn brown they are good to go. I heat up the skillet with avocado oil, once the hash browns are rehydrating, so that it is nice a hot and ready to cook.
To get more veggies in, I put everything on a bed of spinach. The food heats it up enough that I don't need to cook it before hand. The salt and oil makes it so it is not very noticeable taste wise.
Delicious and nutritious! Sprouts are another way to add a ton of nutrients to your meal. Or if you don't want all the veggies, just leave them out.
All American Breakfast Skillet + Veggies Recipe
1 egg per person (add 1/2 teaspoon of powdered garlic &
dash of oregano)
1 large sausage patty per person
1/2 yellow onion
1/2 red bell pepper
1/2 green bell pepper
I package of Idaho Spuds hash browns (serves 7)
1/4 cup of avocado oil
1/4 avocado per person
Pinch of sprouts per person
Hot sauce of your liking.
