I wasn’t always a fan of pickles. But I remember that moment when my taste buds matured just enough to appreciate the pickle flavor. After that, it was pickles on pastrami, pickles in salads, and definitely pickles on hamburgers.

Maybe I went a little overboard because, for a while, I lost my taste for them. Then someone introduced me to pickle-flavored sunflower seeds. Those are hands-down my favorite sunflower seeds, and they kicked off my “second pickle awakening.” I dove headfirst into all kinds of pickle-flavored products with new excitement. Potatoe chips, crackers, even that pickle ketchup. Some were good, others—well, let’s just say they missed the mark. But nothing has yet matched the joy of dill pickle sunflower seeds.

So, the first phase was all about real pickles. The second was dedicated to pickle flavoring. And now, I feel like I’m on the verge of phase three: odd pickle pairings. Starting with Utah’s own legend—the pickle pie.

Ever heard of pickle pie? The famous Sunglow Restaurant and Motel in Bicknell made it a local treasure. Bicknell’s a small town, home to just over 300 people near Capitol Reef, you know just down from Koosharem.

At first glance, pickle pie doesn’t sound all that appealing. But locals swear by it, and its fame really does speak for itself. If you’re thinking “savory,” though, think again. Many say the texture is similar to mincemeat with a surprising sweet-and-sour pickle zing. Flavored with lemon extract, cinnamon, nutmeg, and, of course, pickles, this pie has built quite a legacy that’s enhanced the glow of Sunglow Restaurant and Motel. Next time we are passing through Bicknell, it might be time to try a slice of pickle pie.
