The Great St George Egg Hunt is Underway

Where did all of the eggs go?  I know there was a shortage before Christmas as every kitchen in America was fired up baking treats for family and friends.  But wow.  Almost every store is picked over when you get to the egg section.

My wife is really picky when it comes to eggs too.  I can't just swing by and grab a carton of eggs on the way home.  They have to be from free range chickens.  I'm a big supporter of "cage free" too but it's getting difficult to stick to that.

Luckily, like a lot of people around this part of Southern Utah, there are neighbors with chickens and a steady supply of eggs.  My neighbor Roy drops in with eggs once a week or so.  In his busy months, the chickens are chugging out so many eggs, it's hard for him to keep up.  Last summer, the lady who cuts my wife's hair called and asked if she could take a few dozen more because they were being overrun with EGGS.

I worked on a farm when I was a kid and while I'm no farmer, I have learned a little about farm animals along the way.  Chickens produce more eggs when they get a lot of sun.  That's why the eggs are so plentiful in the summer months and seem to be in short supply now.  Why is there never a kale shortage by the way?

If you have a neighbor who keeps your egg supply replenished regularly, be sure to be nice to them.  People in the grocery stores are going to start slugging it out over eggs pretty soon.

Don't tell him what's going on with eggs just yet.  He'll just get stressed out.
